Nestled at 3810 Barrancas Ave. Suite A, this new restaurant is making waves in the Pensacola dining scene with its unique blend of Vietnamese and Cajun cuisines.

A Rapid Rise in Popularity

Since opening its doors just over two weeks ago, Blazin Casian Kitchen has quickly garnered a loyal following. The cozy 40-seat establishment has become a hotspot for locals eager to explore Bui’s recommendations. While the wings are a standout item, patrons are also flocking to the fresh, fried catfish baskets and the hearty beef pho, which is crafted with a dedication that requires a minimum of eight hours of preparation. “You want the broth to be flavorful,” Bui emphasizes, highlighting the care that goes into each dish.

The Culinary Partnership

The restaurant’s unique menu is a product of a dynamic partnership between Bui, Phuong Nguyen, and Simon Tran. Tran brings years of experience in Cajun cooking, while Bui is a master of traditional Vietnamese dishes. This collaboration allows for a delightful overlap of ingredients and flavors, such as shrimp incorporated into fried rice or featured in Tran’s spicy seafood boil, which is served alongside potatoes, corn, and sausage.

Expanding Culinary Horizons

Blazin Casian Kitchen is not just about familiar flavors; it’s also about pushing culinary boundaries. Regular visitor Shanaita Kirkland, a self-proclaimed seafood lover, has been exploring the menu during her frequent visits. She appreciates the “better variety” available on the west side of town, especially given her limited lunch break. The restaurant’s diverse offerings encourage diners to step out of their comfort zones and try something new.

A Menu Full of Choices

The menu at Blazin Casian Kitchen is thoughtfully categorized, featuring fried baskets of wings and seafood, pho, rice and vermicelli dishes, sandwiches, fried rice, and seafood boil platters. Each dish is crafted with care, reflecting Bui’s commitment to quality and authenticity.

Bui, who moved from Vietnam to the United States in 1992 and settled in Pensacola in 2006, draws inspiration from his childhood in the coastal city of Quy Nhon. He fondly recalls weekends spent with family, where his mother would prepare traditional dishes for their large gatherings. One of his cherished memories includes enjoying mini-Vietnamese savory pancakes served with fish sauce, a dish he now offers at his restaurant.

Bringing Authenticity to Pensacola

Among the unique offerings is the Fried Stuffed Sticky Rice Cheers, a nostalgic snack that Bui enjoyed from street vendors in Vietnam. This dish features a crispy exterior and a soft, flavorful interior filled with pork, onion, and spices. It’s a rare find in the U.S., and Bui is proud to share it with the Pensacola community.

Of course, the menu also includes beloved staples like the banh mi sandwich, available with grilled pork or chicken, and a selection of multi-flavored milk teas that are sure to delight.

A Dream Realized

For Bui, opening Blazin Casian Kitchen is a dream come true. After years of running a dry-cleaning business, he decided to pursue his passion for cooking. “I’m very excited,” he shares, reflecting on the journey that led him to this moment.

Currently in its soft-opening phase, Blazin Casian Kitchen is set to celebrate its grand opening on November 1. The restaurant operates daily from 11 a.m. to 8 p.m., except for Wednesdays, offering both dine-in and carry-out options.
